Mexican Corn on the Cob, or Elote, is a popular street food in Mexico. This savory and slightly spicy dish consists of grilled corn cobs slathered with a creamy mixture of mayonnaise, sour cream, cheese, and spices, then topped with lime juice and chopped cilantro.

Directions
Preheat grill to medium-high heat.
Peel back the husks of the corn but leave them attached at the base. Remove silk strands.
Brush corn cobs with melted butter or oil, then grill for about 8-10 minutes, or until lightly charred and cooked through. Rotate occasionally.
In a small bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt.
Once the corn is done grilling, remove from heat and brush each cob with the mayonnaise mixture.
Sprinkle crumbled cotija cheese evenly over each cob.
Garnish with chopped cilantro and extra lime juice if desired. Serve immediately.
