Delicious and fluffy pumpkin pancakes perfect for a cozy breakfast or brunch.

Directions
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, mix the pumpkin puree, milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Preheat a non-stick frying pan or griddle over medium heat.
Scoop about 1/4 cup of batter onto the preheated surface for each pancake.
Cook for 2-3 minutes until the edges start to set and bubbles form on the surface.
Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
Serve warm with maple syrup, whipped cream, or your favorite pancake toppings.
