Preheat the oven to 400°F (200°C).
Cut the pumpkin into wedges, approximately 1-inch thick, and remove the seeds and stringy pulp.
In a small bowl, combine olive oil, minced garlic, chopped fresh herbs (such as rosemary, thyme, and sage), salt, and pepper.
Brush the pumpkin wedges with the herb mixture, making sure to coat both sides.
Place the coated pumpkin wedges on a baking sheet lined with parchment paper.
Bake in the preheated oven for about 35-40 minutes or until the pumpkin is tender and slightly caramelized.
Remove from the oven and serve hot.
