In a large bowl, combine soy sauce, hoisin sauce, honey, sesame oil, ginger, and garlic. Mix well to combine.
Add drumsticks to the bowl and toss until well coated in the marinade. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
Preheat your oven to 375°F (190°C).
Remove the drumsticks from the marinade and place them on a baking sheet lined with parchment paper or aluminum foil.
Bake the drumsticks in the preheated oven for 40-45 minutes, basting with the remaining marinade every 10-15 minutes, until the drumsticks are cooked through and the glaze is sticky and caramelized.
Remove from the oven and let them cool for a few minutes before serving. Garnish with sesame seeds and chopped green onions, if desired.
