In a skillet, heat olive oil over medium heat. Add diced pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
In the same skillet, melt butter. Add sliced mushrooms and cook until they release their moisture and brown slightly, about 5 minutes.
Add minced garlic and cook for an additional 1 minute, until fragrant.
Pour in chicken broth and cream. Bring to a gentle simmer and let it cook for 5 minutes, allowing the flavors to meld together.
Return the cooked pork to the skillet and stir to combine. Season with salt, black pepper, and dried Italian herbs to taste.
