In the same skillet, add more oil if needed and sauté the bell peppers and leeks until tender-crisp, about 2-3 minutes.
Return the pork to the skillet and pour the prepared sauce over it. Stir well to coat the pork and vegetables evenly.
Cook for an additional 2-3 minutes, until the sauce thickens slightly and everything is heated through.
