Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add onions and cook until they become translucent.
Add diced apples, celery, and minced garlic to the skillet. Cook for another 2-3 minutes or until the apples soften slightly.
Remove the skillet from heat and stir in breadcrumbs, thyme, rosemary, salt, and black pepper. Mix well to combine.
Using a sharp knife, make a pocket in each pork chop by cutting horizontally through the side of the chop.

Secure the opening of each pork chop with toothpicks.
