Directions
Preheat your grill to medium heat.
In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, and mustard powder to create a dry rub.
Rub the dry mixture all over the pork ribs, covering them evenly. Let them sit at room temperature for 15 minutes to allow the flavors to penetrate.
Place the ribs on the grill, bone-side down, and cook for 1.5 to 2 hours. The indirect heat will slowly cook the ribs while infusing them with a smoky flavor.
While the ribs are cooking, prepare the BBQ sauce by combining ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper in a saucepan. Simmer the sauce for 10-15 minutes until all the flavors meld together.
After the initial cooking time, brush the ribs generously with the BBQ sauce, covering both sides. Return them to the grill, bone-side down, and continue cooking for an additional 30-45 minutes, basting with the sauce every 15 minutes.
Once the meat is tender and the sauce has caramelized, remove the ribs from the grill and let them rest for 5-10 minutes. This step allows the juices to redistribute within the meat.
Slice the ribs between the bones and serve them hot. Optionally, brush with more BBQ sauce before serving for an extra burst of flavor.
