A delicious and comforting pea soup with crispy bacon. This creamy soup is packed with flavors and perfect for a warm and hearty meal.

Pea and Bacon Soup
- Low in fat, high in fiber, and a good source of protein.
Directions
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
Add the chopped onion and garlic to the pot and sauté until the onion is translucent and fragrant.
Add the peas, chicken broth, and thyme to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
Return the pot to low heat and stir in the heavy cream.
Season with salt and pepper to taste. If desired, garnish with the crispy bacon and serve hot.
