Waldorf Chicken Salad

Directions
Place the chicken breasts in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce the heat and simmer for 20 minutes or until the chicken is cooked through. Drain and let cool. Once cooled, shred the chicken into bite-sized pieces.
In a large mixing bowl, combine the shredded chicken, diced apples, halved grapes, chopped walnuts, and celery.
In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and black pepper to make the dressing.
Pour the dressing over the chicken mixture and toss until everything is well coated.
Refrigerate for at least 1 hour to allow the flavors to meld.
